On Roast Chicken Breast Sandwiches.


 

 

Don't piss off our #fritz He's our Swiss-born, Cordon Bleu chef, whom we adopted as a very small boy and he lives in the broom closet. What happens is, he goes in the kitchen and just absolutely kills the #sandwich and of course as his #boss you feel exploitative as all hell, but also obligated the eat the thing.

He really is a genius.

He's been turning meat into candy for a very long time now...

Which aforesaid sandwich, I have to admit, was pretty damned good and you ain't going to get a better chicken breast sandwich anywhere else in this here town...not at this price, and that is for sure. While we can make a better sandwich, the price would have to be pretty high to make a profit at it, and perhaps that is the key to understanding food retail.

Okay, so we coated this frozen chicken breast in Shake & Bake. We put it in a bag and froze it. We cooked the first one fresh, the other two 300-gram pieces were frozen for later.

When we take it out, Fritz has some ideas and sprinkles seasoning salt, fresh-cracked black pepper and some other stuff on there. There’s a bit of Diana Sauce on there.

The aluminum foil in the pan has been sprayed with non-stick, butter-flavored cooking spray, and it took about an hour at 375 degrees F. When we turn off the oven, we might just let it sit in there for a while, to allow it to finish cooking, to ‘rest’ as they say. To lock in those juices and to give us a minute to spread a little mayo on a bun, squirt on some mustard, pull off a bit of lettuce and dice up just a wee bit of onion.

Fritz is an imaginary character, in a bit of a disclaimer.

You could toast the bun—just a thought. We might have a thin slice of tomato on there, but the last one we bought got a little mushy after one or two slices and a day or so in the fridge. That, I think, has something to do with the fact that it’s the middle of winter and everything has to come in by truck…

Other than that.

If that sandwich don’t knock your socks off, one would have to inquire just what would.

This is the difference between a sandwich and art, ladies and gentlemen.
